Cold Noodles with Shredded Chicken and Sesame Sauce

Cold noodles with shredded chicken and sesame sauce (麻醬雞絲涼麵) is a Chinese dish which is light, refreshing and easy to make.

Cold noodle, which is known as Liang Mian (涼麵) in Chinese, is a popular street food in China. It may also be served as a quick breakfast or lunch in the restaurants.

There are different versions of this recipe in different parts of the China. The version presented here is the one that I have seen in many restaurants in Hong Kong.

The noodles will absorb all the wonderful flavours of the sesame sauce. You can use any types of noodles – simple ones which are only made of wheat flour and water only, or egg noodles. Another popular choice of noodles is Liang Pi (涼皮, literally means cold skin). They are slippery, flat and jelly-like noodles made from mung beans.

Ingredients

  • 1 large chicken breast
  • 2 slices ginger
  • 1 spring onion, cut into sections
  • 300g fresh Chinese noodles
  • 1 cucumber, deseeded and julienned
  • 200g bean sprouts, raw or very lightly blanched (for one min)
  • 75g roasted peanuts, coarsely chopped 
  • 2 tsp roasted seasame seed
  • 1 spring onion, finely diced

For the sauce:

  • 2 tbsp Chinkiang or aged black vinegar
  • 1.5 tbsp chilli oil
  • 2 tbsp sesame paste
  • 4 tsp sugar
  • 1/4 tsp Sichuan pepper, roasted and ground
  • 2 tablespoon sesame oil
  • 1 garlic clove, pureed
  • 3 tbsp soy sauce

Instructions

  1. For the sauce, mix all ingredients in a bowl. Adjust seasoning with salt. Let stand for 30 minutes.
  2. Pour enough water into a small pot which would be enough to cover the chicken. Add the ginger and scallion. Heat the pot until the water boils. Add the chicken, and bring to the boil again. Cover the pot, turn off the heat, and poach for 20 minutes. Remove the chicken and let it cool down. Shred the chicken meat by hand, and set aside.
  3. Cook the noodles in plenty of boiling water. Rinse under the cold tap and drain. Mix the noodles, cucumber and bean sprouts with the sauce thoroughly. Serve in a bowl. Top with the chicken, peanuts, sesame seeds and spring onions.
